90% tempranillo 10% verdejo.
Petillant naturel or as it is known Pet Nat, good bubbles = good times. It is the bubbles of the house, made with the grapes of the first days of vintage, fermented wine with low turbidity and low temperature, when density has fallen enough is bottled to finish the F.A. in the bottle.
After a few months of aging in the bottle with its fine lees, a deguelle a la volé is made to remove those lees and is completed with dry wine from the same lot.
Now just a little excuse is missing to open one of these bottles and they will make magic of that moment!!

Wine made basically for the New York market, a commission from Alvaro de la Viña to have a trilogy of my wines.
Rose intentionally elaborated, it is not a normal bleeding.
Elaboration:
The Tempranillo grape once destemmed is allowed to macerate a few hours prior to F.A. To achieve a higher aromatic charge.
Racking must and with low turbidity is assembled with a small% of must of Verdejo that will give its freshness and finesse.
Finished the F.A. is decanted eliminating the lees so that they do not interfere in its process of aging and do not lose the fruitfulness, it has a last racking prior to its bottling that is carried out following the phases of the moon and the biodynamic calendar.

An ancestral wine with natural CO2 made with grape rufete, is the first rufete that is made with this ancestral method, fresh wine, tense, nothing fatty or alcoholic, where what is intended is your friendliness, we are before a wine glou glou de gulp long and easy.
Grape destemmed, slightly pressed and defrosted is fermented at a low temperature so as not to lose its typicity, the main parameter that governs the harvest time of this grape for this wine is the acidity which, together with the bubbles, will give the grace to this ancestral wine. By the way without anything added and nothing stolen from their naturalness !.
